Here are some of my own recipes.

Messy Jessies Mess

How about something better then just the old sloppy joe or manwich. With Messy Jessies Mess and chips on the side you will have a meal fit for the QUEEN of all messes.

I called these Messy Jessies Mess for a friend of mine named of corse Jessie.

MESSY JESSIES MESS.

Party size

Items needed: Serves 10-12 guests.

3-5lb Top or Bottom Roast. Trimmed of most fat and cut into small chunks.

2 packs Instant au jus packets

1 med. onion chopped

1 large bell pepper chopped

small jar minced garlic

2 stalks celery chopped

2 jalapeno peppers chopped (remove seeds for mild heat)

1 can tomato paste

mushrooms fresh sliced or 2 cans

2 jars of Pace salsa your choice HOT or MEDIUM

salt and pepper to taste

Hard rolls or hamburger buns

Here is how to make the MESS

Place roast in a crock pot with the 2 packets of au jus and 2 cups of water. Add all vegetables (onion, peppers and celery, garlic and jalapeno peppers). Add 3 tablespoons of garlic.

Cover and turn on high for 8 hours or until meat falls apart with fork. Add more water if needed

When meat is done and will come apart with a fork remove from pot and shred meat apart. Set aside. Leave crock on low heat.

Add tomato paste, salsa and mushrooms to the crock pot. Mix well, return meat and turn pot on low.

Let cook until mushrooms are done. NOTE: The longer it cooks the better it gets.

. Slice a hard roll or a hamburger bun. Serve with chips or fries. Now Here is a hint to make it just a little less messy, on the top half of bun or roll remove most of the bread and discard. This way when you fill the roll you have more Messy Jessies Mess to enjoy with out it coming out on your lap

Pepperoni Stuffed Meatballs with Horseradish Cheese

3 pounds of 80 percent ground beef
1 pack of pepperoni
1/2 pound horseradish cheese
3 eggs
1/4 cup milk
oregano
1 cup bread crumbs
salt and pepper
vegetable oil
 
In a large bowl place ground beef, eggs, oregano, bread crumbs and salt and pepper.  Mix well adding the milk.
Using your hand place a 1/4 cup of meat mixture in the palm making an indentation and place 2 slices of the pepperoni inside, place a 1/4 inch chunk of cheese on top then add 2 more slices of pepperoni over cheese.  Close the meatball and making sure there are no holes.
In a pan of hot vegetable oil carefully place the meatballs in oil.  Cook meatballs for about five minutes. drain the meatballs on paper towel before placing in your sauce.  Continue cooking all meatballs until your done.
Spaghetti Sauce
ingredients needed.
1 Large jar Prago Spaghetti sauce
1 can sliced tomatos
1 can tomato paste and 1/2 cup water
1 lg onion chopped
1 lg bell pepper chopped
1 pack of pepperoni
1 large pack mushrooms sliced
1 pint grape tomatos unpeeled
minced garlic
salt and pepper
In a large pan fry onions, peppers and garlic in 2 tbs of oil. Do not brown.
Add sauce, can tomatos, paste and grape tomatos. Bring to a boil, reduce heat to a simmer. Add meatballs. Simmer 1 hour, add mushrooms and pack of pepperoni cook 1/2 hour. Serve over spaghetti with garlic bread
